Preparation and use
Add 500g/1lb 2oz coffee cake mix to a bowl fitted with a beater. On slow add 115ml/4fl oz water, 150ml/5 fl oz of vegetable oil, 3 medium eggs, add gently to dry mix on slow for 1 minute. Scrape down and mix for 3 minutes on medium speed. Pour the mixture into a small greased lined loaf tin or 6” cake tin. Bake in a preheated oven at 180ºC, 360ºF, Gas 4, for approximately 35 – 50 minutes.
