1200g – UWeigh Rich Fruit Mix

120ml – Water

3 - UWeigh Large Free Range Eggs

 

For Decoration

1-2 tbsp - Apricot Jam

1 - UWeigh Large Free Range Egg

600g-900g - UWeigh Marzipan

Method

For the Cake:

  1. Add the cake mix into a bowl, and add the eggs and water. Then mix together until combined with either a beater attachment or by hand.
  2. Pour half the mixture into a greased and lined 20cm (8”) cake tin.
  3. Smooth the top and divide the marzipan into 3. Roll out 1 portion into a 20cm (8”) circle and cover the mixture with the marzipan circle.
  4. Add the rest of the cake mixture and smooth the top leaving a slight dip in the centre to allow the cake to rise.
  5. Bake in the preheated oven at 180ºC/360ºF/Gas 4 for approximately 1½ hours, or until baked.
  6. Once baked remove from the oven and leave to cool.

For Decoration

  1. Preheat the oven to 160ºC/320ºF/Gas 3.
  2. Brush the top of the cooled cake with the apricot jam.
  3. Take the marzipan and roll one portion into a  circle to cover the top of the cake.
  4. With the remaining marzipan form 11 small balls and place them on the top
  5. Eggwash the marzipan and return the cake to the oven for about 10 minutes or long enough for the marzipan to brown.
