Add the cake mix into a bowl, then add the water. Mix together until combined with either a beater attachment, or by hand.

Add the mixed fruit with peel and stir into the cake mixture, making sure the fruit is evenly distributed.

Half fill the muffin cases with the mixture.

Dust your work surface with icing sugar to stop the marzipan from sticking, and roll out to a thickness of approximately 3 – 4mm.

Cut the marzipan into discs roughly the same size as the bottom of your muffin case. Place one disc into each case and spoon the rest of the mixture on top.

Bake at 180ºC, 360ºF, Gas 4, for approximately 25-30 minutes, until risen, golden and firm to the touch. Then leave to cool.

Beat together the icing sugar and orange juice to make icing thick enough to coat the back of a spoon. Spread over the muffins and top with a cluster of mini eggs. Leave to set.
